Salmon Couscous Salad
A refreshing, easy-to-prepare salad, perfect for a relaxing summer patio dinner.
|2 cans (125 g each) ||Gold Seal Skinless Boneless Sockeye Salmon, drained |
|3 tsp ||chopped fresh mint |
|2 tsp ||chopped fresh basil |
|1/3 cup ||chopped fresh parsley |
|juice & zest of 1 lemon |
|1/2 cup ||finely diced celery |
|1/2 cup || finely diced red peppers |
|1/2 cup || finely diced cucumber |
|1/4 cup ||chopped green onions |
| 1 pkg (200 g) ||cooked couscous (follow directions on package) |
| 1/2 cup ||olive oil |
| ||freshly cracked pepper, to taste |
| ||6 radicchio leaves (optional) |
Add halved cherry tomatoes for extra color. Or serve with a side of grilled summer veggies.
Can be made a day ahead and refrigerated.
- Combine all ingredients (except radicchio) in a large mixing bowl and mix well.
- Serve directly on chilled plates, or scooped into radicchio leaves.
