Salmon Couscous Salad
A refreshing, easy-to-prepare salad, perfect for a relaxing summer patio dinner.
Imperial | Ingredients |
2 cans (125 g each) | Gold Seal Skinless Boneless Sockeye Salmon, drained |
3 tsp | chopped fresh mint |
2 tsp | chopped fresh basil |
1/3 cup | chopped fresh parsley |
| juice & zest of 1 lemon |
1/2 cup | finely diced celery |
1/2 cup | finely diced red peppers |
1/2 cup | finely diced cucumber |
1/4 cup | chopped green onions |
1 pkg (200 g) | cooked couscous (follow directions on package) |
1/2 cup | olive oil |
| freshly cracked pepper, to taste |
| 6 radicchio leaves (optional) |

Chef's Tips
Add halved cherry tomatoes for extra color. Or serve with a side of grilled summer veggies.
Can be made a day ahead and refrigerated.
Directions
- Combine all ingredients (except radicchio) in a large mixing bowl and mix well.
- Serve directly on chilled plates, or scooped into radicchio leaves.
