Salmon, Watermelon and Feta Salad

The technical term for the sweetness of the watermelon and the savoury of the salmon is called ‘more’ because that is what your family will keep asking for.

1 can (125 g) Gold Seal Skinless Boneless Sockeye Salmon, drained
1 Tbsp white wine vinegar
3 Tbsp vegetable oil
1 tsp regular mustard
  salt & pepper to taste
1/4 small watermelon, peeled, seeded & cubed
1/2 cup feta cheese, crumbled
  • Chef's Tips

    Garnish with thinly sliced red onion.


    1. Mix vinegar, oil, mustard and salt and pepper together and set aside.
    2. Split the watermelon and feta cheese onto 4 chilled salad plates.
    3. Add chunks of salmon and drizzle the mustard vinaigrette on top.
