Tuna and Orange Avocado Salad

1 can (100g)   Gold Seal No Drain Flaked White Tuna
1 can (312g)
Mandarin oranges, drained

Juice of one lime
1 tsp (5ml)
Fresh ginger, grated
¼ tsp (1.5ml) 
Dijon mustard
 3 tbsp (45ml) Vegetable oil
 1/2 Red onion thinly sliced
 1 Avocado, peeled and sliced
 2-1/2 cups (625ml) Baby Arugula
  • Directions  

    1. In a small bowl combine the lime, ginger and vegetable oil and mix well.
    2. In a separate bowl combine tuna, oranges and onions.
    3. To plate your salad layer ½ cup of arugula, then 4 slices of avocado, then a portion of the orange, tuna mixture and finally drizzle the dressing over top and serve immediately.
