Smoked Mussels and Lentils

Serves 4

Imperial Ingredients
1 can (85 g)  Ocean’s Smoked Mussels, drained 
1 Tbsp  olive oil 
1/2 cup  finely diced onions 
1/2 cup  finely diced red pepper 
1 can (455 g)  lentils, drained 
1 can (340 g)  diced tomatoes, drained 
1 tsp  chopped fresh thyme 

freshly cracked pepper, to taste

juice of 1 lemon
chopped Italian parsley, for garnish

What to Do

  1. Heat oil over medium/high heat in a large non-stick frying pan. Add onions and peppers and sauté for 1-2 minutes.
  2. Add lentils, tomatoes, mussels and thyme; sauté for 4-6 minutes, stirring constantly.
  3. Season with pepper and lemon juice, and garnish with fresh parsley.

Chef’s suggestion:

A quick, low-fat lunch that’s got plenty of flavour. 

Substitute fresh basil for the thyme or add roasted garlic. Try fresh grape tomatoes instead of canned when they’re in season. Enjoy with a warm bread roll.
